Sugar Cookie Energy Bites

INGREDIENTS: 

  • 1 cup almond flour
  • ½ cup granola butter
  • ½ cup honey
  • 10 scoops vanilla colostrum
  • 1 tsp almond extract
  • Pinch of salt

DIRECTIONS: 

  1. Combine the Dry Ingredients: In a large mixing bowl, add 1 cup almond flour and a pinch of salt. Stir to combine.
  2. Add the Wet Ingredients: Add ½ cup granola butter and ½ cup honey to the bowl. Stir well until the mixture starts to come together.
  3. Flavour: Add 10 scoops of vanilla colostrum to the mixture. Stir thoroughly until the colostrum is fully incorporated and the mixture is smooth. Stir in 1 tsp almond extract. This will give the energy bites their sugar-cookie-like flavor.
  4. Mix: Continue mixing until everything is evenly combined, and the dough has a smooth, slightly sticky texture.
  5. Form the Bites: Scoop out a tablespoon of the mixture and roll them into balls with your hands.
  6. Chill: Place the energy bites on a parchment-lined baking sheet or plate. Refrigerate for at least 30 minutes to allow them to firm up.
  7. Once chilled, the energy bites are ready to eat! Store them in an airtight container in the fridge for up to 1 week.
